This is one of my favorite recipes for Easy Roasted Eggplant Hummus!
Easy Roasted Eggplant Hummus
4 cloves of garlic
1 can of garbanzo beans (chick peas) drained and rinsed
1 teaspoon cumin
1/4 cup extra virgin olive oil
Salt (to taste)
Pepper (to taste)
Dash of red pepper flakes (optional)
Directions: Cut eggplant lengthwise then take halves and score like a checkerboard. Take peeled garlic cloves and insert into slits made in eggplant. Roast at 350 degrees for 1 hour.
Take eggplant, garbanzo beans and seasonings and blend in blender or food processor while slowly adding olive oil until you reach your desired consistency.
Viola! You have just made hummus. Garnish with parsley or pepper flakes if desired.
Serve with veggies or crackers.
